Miniature Peanut Butter Cakes
A few weeks ago I stumbled across a rather attractive display of peanut flour bags at Trader Joe’s. Of course, a bag wound up in my cart and I had no idea what to do with it. This morning I set out on a mission to find that little peanut flour bag’s life purpose. I think I may have found it. Thank you, Google.
I ultimately stumbled upon a brilliant recipe for an “Inside-Out Peanut Butter Cup Cake” at Moves N Munchies. Which I was directed to via PB and Jenny where Jenny shared a declaration of her love for the recipe. Oh, the places the web takes you…
These little cakes are amazing! I followed the Moves N Munchies recipe with only one minor tweak. I noticed Jenny added 1 tsp. of honey and I did the same. The final product was a warm and perfectly encrusted cake with an inner texture reminiscent of whipped mousse. The recipe makes two protein-packed miniature cakes which I baked in ramekins for 18 minutes. I drizzled both with Chocolate PB2. I think the shelf life for that little peanut flour bag just got a lot shorter.
