Frosty No-Bake Glo Cakes: A frozen, no-bake delicacy
Do you ever fall absolutely in love with a treat, make it for days on end, and then completely forget about it? Apparently, I do. I was searching for a good, indulgent post-run snack recipe and stumbled upon Angela’s Frosty No-Bake Glo Cakes. Last summer, I was whipping up batches of these like there was no tomorrow. Then, I must have moved onto something else because I have not made them since. That had to change.
I quickly whipped up a batch of four cakes (which literally takes only a few minutes) and tossed them in the freezer. After a long, hot run I darted straight towards that freezer. Those frosty glo cakes were mine! I cannot believe I waited so long to make these again. After an hour in the freezer, they are cold and chewy with crunchy dark cacao chips that melt in your mouth. Talk about post-run decadence. These cakes are perfection. I followed her recipe and made only a few minor tweaks, I used Kamut puffs instead of crisp rice cereal, crunchy almond butter instead of peanut butter, Ghirardelli’s 60% cacao chips in the place of cacao nibs (I used 1 tbsp of chips), and Navitas raw cacao powder versus standard cocoa powder. The beauty of these little guys is their versatility (and no-bake is always a plus, too). So toss in a few of your favorite mix-ins, whip up a big batch of glo cakes, and pop them in a freezer for a little over an hour. You will be smitten!
