I am about 99.9% positive that I have been in a time warp. These have been wildly busy days. I’ve been absorbed in work.  I’ve also become absolutely enamored with running. The beautiful spring weather has inspired me to seize every nice day and get my tail outside!  Running fanatics, if you have access to the Endomondo sports application on your smart phone, it is a must download! It tracks your mileage and run time history. The “Pro” version will challenge you to outperform your previous runs and will even dish out a little “pep talk”. I love it!

One thing I am sure of, is that busy days and long runs call for quick, filling, and energizing breakfasts. The days of 10-minute breakfast prep time are long gone and cereal and overnight oatmeal have taken the main stage.  However, I refuse to sacrifice taste. I promise the following breakfast ideas will turn a quick breakfast into an indulgent treat. Indulgence aside, they will leave you fueled for conquering the day!

Whole Wheat Biscuits Cereal with Cinnamon, Frozen Banana Slices and Raisins

Frozen Banana and Raisin Wheat Squares Cereal

I am absolutely infatuated with this cereal combo. I combine Kashi’s Autumn Wheat Whole Wheat Biscuits cereal with 1 tbsp of raisins, the frozen slices of a medium banana, and a sprinkling of cinnamon. The frozen banana slices become absolutely drool-worthy when drowned in soy milk. I ate this breakfast every single day this week and still get excited just writing about it.

Cacao Banana Overnight Oatmeal

Chocolate and Banana Overnight Oatmeal

Chocolate fans, you are going to love this one!  I absolutely adore a big bowl of creamy overnight oats. Even better? Thick, chocolaty oats with fresh banana slices. Click here for the recipe that inspired it all! Angela at Oh She Glows has a fantastic recipe that is very easy to customize to your own liking. For the most part, I follow her recipe. However, I prefer to use 1/2 cup of light original soy milk and 1/2 cup oats, 1 tbsp of cacao powder (not cocoa powder), and I omit the chia seeds and salt.  If you’ve never tried cacao powder, I recommend Navitas Organic Raw Cacao Powder.  It’s fabulous!

Oatmeal just does not get any better than this! We’re talking about a big bowl packed full of cinnamon, raisins, bananas, walnuts, and old-fashioned oats. I have already proclaimed my love for this breakfast meal, but have since perfected it by tweaking the amount of soy/almond milk I use.  1/2 cup of soy or almond milk and 1/2 cup of oats makes a much thicker, creamier batch of oats than I was previously making. This breakfast idea was also inspired by Angela at Oh She Glows, click here for her recipe. If you omit the chia seeds as I do, I highly recommend going with the 1/2 cup milk to 1/2 cup oats ratio.
