Blueberry Lemon Oatmeal
I, like most of this country, am feeling a bit stir crazy waiting for spring to get here. So much so that I am waking up with twisted spring-inspired concoctions in my brain. I woke up this morning with visions of fresh oatmeal doused in lemon yogurt (from the samples Chobani recently sent my way) and cold blueberries. It had to happen. I haven’t made hot oatmeal in ages. I am absolutely smitten with cold overnight oatmeal. Since I didn’t prep cold oats last night, I took the traditional route and whipped up a batch of hot oatmeal. I topped my oats with a dollop of Chobani Lemon Greek Yogurt, blueberries, and walnuts. Fabulous! I am going to insert a secret here: I still prefer my cold, overnight oats. However, this did the trick and for a moment my spring fever was subdued. Spring, can you get here already!?
Lemon Blueberry Oatmeal:
1/2 c. original light soy milk
1/2 c. water
1/2 c. old-fashioned oats
1/2 c. blueberries
2 tbsp. Lemon Chobani 0% Greek Yogurt
1 tbsp. walnut halves and pieces
Bring water and soy milk to a boil. Add old-fashioned oats and continue to cook for five minutes. When oats are ready, top with lemon Greek yogurt, walnuts, and blueberries.
Mix and enjoy!
