Overnight Oatmeal: The busy person’s breakfast.

Cinnamon Raisin Overnight Oats - View

I cram a lot into my mornings. Most days I prep either a chicken sausage or egg English muffin sandwich or smoked salmon, always with a side of fruit. I can now tell you, I have officially eaten so many English muffins I don’t really want to look at another one for quite a while.

This is what lead me to my latest infatuation: Overnight Oatmeal. It does not get any more convenient (and delicious!) than this. I have read about it for quite a while on several of the blogs I follow. I’d bookmarked about 5,000 different overnight oatmeal recipes, but I’d never made one. This week it was time to venture into overnight oats territory. I immediately went to Oh She Glows since her recipes have never lead me astray and zoned in on her “Oatmeal Raisin Cookie Vegan Overnight Oats“.

So what does this have to do with busy people? They are wildly easy to make. The night before, toss all of the ingredients into a bowl and let them soak overnight. In the morning, you have a decadent bowl packed full of thick oats, raisins, bananas, cinnamon and walnuts. No heating needed. I am literally saving at least 10 minutes every morning by eating overnight oats!

These oats are a game changer. Busy people, rejoice!
