Chocolate-Drizzled Cinnamon Raisin Clusters
Today I transformed one of my favorite no-bake bar recipes into decadent, bite-sized clusters. My original mission was to create miniature rounds for a “grab and go” snack. My plans quickly escalated. The final product: Chocolate-Drizzled Cinnamon Raisin Clusters. They are wildly messy to make, but absolutely intoxicating to eat.
Chocolate-Drizzled Cinnamon Raisin Clusters
Ingredients:
1/4 cup crunchy almond butter
1 1/2 tsp ground cinnamon
1/2 cup seedless raisins
2 cups kamut puffs
2 tsp vanilla extract
1/3 cup raw honey
Directions:
In a small pan, mix crunchy almond butter, raw honey, vanilla extract, and cinnamon over very low heat until well-blended. Promptly remove. Mix in kamut puffs and raisins. Stir until well-coated. Hand-pick clusters of about 5 puffs and a raisin and drop over parchment paper.
Microwave cacao chips for approximately 45 seconds. Promptly remove. Stir cacao chips until well-blended. Drizzle melted cacao over each cluster.
Refrigerate clusters for at least 1.5 hours before eating. Store in refrigerator.
