Smoked Salmon, Swiss, and Baby Romaine on Mini Wheat Bagels: Appetizers for Breakfast? Yes, please!

One of my all-time favorite breakfast meals consists of smoked salmon and spreadable Swiss.

Well, that varies, all the time. It used to be that I swore by a wheat English muffin topped with Swiss and smoked salmon. That was my go-to combo.

That all changed when I stumbled upon Trader Joe’s 100% Whole Wheat Mini Bagels. They had salmon and spreadable Swiss written all over them.

This last weekend I decided to add a bit more nutrients into the mix and add a bit of Baby Romaine.  What I ended up with was absolutely divine.

The mini wheat bagels have a crunchy outer crust and are very moist inside.  When combined with a thick spread of Swiss and topped with the Romaine and Smoked Salmon, they were unbelievably decadent.

I felt like I was eating appetizers for breakfast! Yes, please. I wanted more!

I have decided that while these made a fabulous breakfast, they would make a perfect appetizer.  They will be making an appearance at our next get-together. In fact, they may be the guest of honor!

What I used: Archer Farms Wild-Caught Coho Salmon (Oakwood Smoked), Laughing Cow Light Spreadable Swiss, Organic Baby Romaine, and Trader Joe’s 100% Whole Wheat Mini Bagels
