Buffalo Chicken Panini and a serious enthusiasm for crackers and cheese
Sometimes you just need some buffalo sauce.
Today was one of those days.
I was craving a buffalo chicken panini in the worst way.
Then this happened.
If you are ever looking for a ridiculously quick way to satiate a buffalo chicken craving, do as follows.
Spread a small amount of light mayonnaise (I love Kraft’s Mayonnaise with Olive Oil) on a slice of bread. Top bread slice with precooked diced chicken and about 1 tbsp of mozzarella.
Drizzle with buffalo sauce. I used about 1/2 tbsp of Frank’s Red Hot Buffalo Sauce. 1/2 tbsp added the perfect amount of kick without adding 5 billion grams of sodium.
Form a sandwich and place on panini grill on medium heat for approximately 4 minutes or until lightly browned.
One of my all-time favorite snacks to eat with a panini is Kashi crackers topped with a scoop of Laughing Cow cheese and nuts.
Thus, the large pile of crackers and mixed nuts (and the random chipotle Laughing Cow wedge lurking in the shadows).
I feel like I’ve confessed my love for this before…
If you’re feeling really crazy, that cracker combo is over-the-top when drizzled with honey, but I didn’t go that far today.
