Pancake Batter Coated French Toast (á la Phyllis)

On the last day of our vacation, I had to ask Phyllis if she would share the recipe for her signature french toast.  Her french toast is absolutely irresistible. I could never turn a bite down.

Her secret? It is dipped into a pancake mixture.  The result: A delicious and thick french toast packed full of flavor.

Here’s the recipe:

Pancake Batter Coated French Toast:


Texas Toast bread slices

2 cups pancake mix (We used Aunt Jemima’s Whole Wheat pancake mix.)

2.5 cups milk (We used soy milk.)

8 eggs

3 tbsp canola oil

1/2 tsp cinnamon


First, place eggs into a large mixing bowl.

Thoroughly whip eggs until they are well-blended.

Next, stir in pancake mix, milk, eggs, canola oil, and cinnamon. Whip ingredients until thoroughly blended.

Dip texas toast slices into mixture.

Fry toast on both sides until they are golden brown and pancake mixture appears thoroughly cooked.

This toast is fabulous with a dusting of powdered sugar and maple syrup.


I opted for a pat of butter and a bit of maple syrup over my slice.

I savored every bite!  This is the kind of french toast vacations are made of.

Each slice is thick and almost fluffy in texture. I can’t even begin to describe how indulgent this french toast is.

It’s just amazing!
