A “Cooking Light” Favorite: Roasted Red Pepper Hummus
I love Cooking Light Magazine. Every time a new issue comes, I actually read the entire magazine from front to back. I’m not talking skimming the articles, but soaking the whole thing in. There is also some serious photo gawking included in all of this.
One of my all-time favorite Cooking Light recipes is their Roasted Red Pepper Hummus. It’s insanely quick to make, capping out at 5 minutes max and the entire recipe fits in the Magic Bullet. Now, that meets Imwaytoobusy standards.
Not to mention, this one’s easy on the eyes:
I let this dip refrigerate overnight and it thickens beautifully. The final product has a delicious, spicy “zing” to it. The color is gorgeous. It has a deep orange hue and the red pepper flakes make it even more vibrant.
