Dinner in a Hurry: Chicken Penne Rigate with Mozzarella and Fire Roasted Tomato Sauce

Some nights you just need a little help with the dinner.  Last night, Giada stepped in. Thanks Giada.

Maybe it’s the chilly weather, but I have had serious comfort food cravings this week.  I decided these whole wheat Penne Rigate noodles I spotted at Target last week were the answer.

Whole Wheat Penne Rigate and Fire Roasted Tomato with Cabernet Sauvignon

I proceeded to swipe the Bertolli Fire Roasted Tomato with Cabernet Sauvignon sauce out of the cabinet and decided they would make a delightful pair.  I added some diced precooked chicken, mozzarella, parmesan cheese, pepper and parsley leaves to the mix.

I have to say, the splash of Cabernet Sauvignon in the Bertolli sauce made the dinner.  It adds a very rich, deep flavor and made it seem a bit indulgent.  It comes highly recommended.

Exactly what I needed.

When you are short on time and need a little “help” with the dinner, what ready-made goods do you turn to?  I’d love to know! Maybe I could make a little room for it in my pantry (or at least shove some things aside to make room for it!).
