Lunch in a Hurry: Apple-Raisin Turkey Panini
I have had an insanely busy week! Can I just say it? I’m way too busy! I traveled for work this week to deliver a presentation. I have been playing catch-up at the office ever since, but I managed to come up with my new favorite panini in the midst of it all!
That would be the Apple-Raisin Turkey Panini. I made it for the first time on Saturday and have made it three times since.
Apple-Raisin Turkey Panini
Two slices of whole-wheat bread
1 light spreadable Swiss cheese wedge ( I use Laughing Cow)
Enough mozzarella cheese for melting (I use Soystation Mozzarella)
6 slices of turkey lunchmeat
2 apple slices
As many raisins as you would like!
(This would be another non-recipe if you haven’t noticed.)
Spread the spreadable light Swiss cheese on one side of each slice of bread. Layer the turkey lunchmeat and apples. Top with mozzarella cheese and raisins.
Press together and grill on a panini maker ( I use the Griller, Jr.) for approximately four minutes.
Promptly remove and enjoy!
I literally savor every bite of this sandwich. The apple and raisin combo is amazing!
