Dessert in a Hurry: Chocolate-Covered Almond Butter Banana Sandwiches

Today’s snack in a hurry is such a delicious, indulgent treat! I can’t wait to share it with you.

I am a BIG fan of chocolate covered bananas and the thought occurred to me that they would be even better with extra filling.  I decided to finely slice my bananas and sandwich them over 1) almond butter and 2) raspberry preserves.

The results were amazing!

Chocolate-Covered Almond Butter Banana Sandwiches and Chocolate-Covered Raspberry Banana Sandwiches:

Ingredients:

1/4 cup of Cacao (or chocolate) Chips (I used Ghirardelli 60% Cacao Bittersweet Chips)

1/4 of a banana

1 tbsp. almond butter

1/2 tbsp. raspberry preserves

Makes one serving (three sandwiches).

Directions:

First, dice your banana into skinny slices and freeze for at least one hour or until they are partially frozen.

Chocolate Covered Banana Sandwiches (Sliced Bananas)

They will have to be stiff for your sandwiches to cling together.

Once slightly frozen, remove and quickly start prepping your chocolate dip.

Place 1/4 cup of cacao chips in a small ramekin dish.

Microwave your cacao chips on high for approximately one minute.  Remove from microwave and stir until completely melted.

Chocolate Covered Banana Sandwiches (Melted)

Quickly make your sandwiches so you can dip them before the chocolate dip begins to cool.

Chocolate-Covered Almond Butter Banana Sandwiches:

Quickly top one thin banana slice with a dollop of almond butter.

Chocolate Covered Almond Butter Banana Sandwiches (Open Faced)

Place another thin banana half on top to form an almond butter banana sandwich.

Chocolate Covered Banana Sandwiches (Almond Butter Banana Sandwich)

Insert a toothpick into your sandwich and dip the almond butter banana sandwich into the chocolate dip. Thoroughly coat. You may have to twist it around to cover the entire sandwich.

Quickly remove your chocolate coated sandwich and place on waxed paper.

Chocolate Covered Banana Sandwiches (Single)

Repeat.  As soon as you have as many sandwiches as you would like, place the sandwiches in the freezer for at least 20 minutes.  Remove from freezer.  With the toothpick intact, they are now ready to eat!

It was delicious, creamy, and decadent!

Chocolate-Covered Raspberry Banana Sandwiches:

(If you are making a variety of sandwiches, make the preserves sandwiches last. They have to sit in the chocolate dip versus getting a clean dipping and muddle up the chocolate dip.)

Quickly top one thin banana slice with a dollop of raspberry preserves.  Place another thin banana half on top to form a raspberry banana sandwich.

Insert a toothpick into your sandwich and place the raspberry banana sandwich into your chocolate dip.

Note: This is the tricky one! Those preserves will very artfully try to dodge the toothpick.  As soon as you have your bananas and raspberry preserves sandwiched you will have to sit the sandwich in the chocolate dip and pull the chocolate up the sides to encase the sandwich.  It is not a dipping-friendly sandwich.  Thoroughly coat. You may have to pour chocolate across the top to finish.

Quickly remove your chocolate coated sandwich and place on waxed paper.

Chocolate Covered Banana Sandwiches (Cooling)

Repeat.  As soon as you have as many sandwiches as you would like, place the sandwiches in the freezer for at least 20 minutes.  Remove from freezer.  With the toothpick intact, they are now ready to eat!

For my batch, I made two almond butter banana sandwiches and one raspberry banana sandwich.

After taste testing…it is hard to pick a favorite. They were so good!

The raspberry banana sandwich really surprised me.  It was delicious. It had that “chocolate-covered cherry” sensation to it, but even better!

The almond butter banana sandwiches were creamy and decadent.  They all go down on my “all-time favorite snacks” list.
