Lunch in a Hurry: Italian Turkey Sausage Open-Faced Sandwich

I am a big fan of Italian turkey sausage and love to precook it so I have it on hand for quick meals.  One of my all-time favorite quick turkey sausage meals is an oven-broiled, open-faced Italian turkey sausage sandwich.  It is rich, full of flavor, and ready in just a few minutes.  Perfect for me!

Italian Turkey Sausage Open-Faced Sandwich:

One thoroughly precooked Italian turkey sausage link (I like Honeysuckle White’s Sweet Italian Turkey Sausages.)

Three large sweet roasted canned red pepper slices (I use the canned sweet roasted peppers by Mancini.)

2 tbsp. of goat cheese (I am a big fan of Alouette’s goat cheese crumbles.)

Sweet Leaf Basil Seasoning (enough for sprinkling)

One bread slice (I prefer whole wheat)

Spray butter (just enough to butter the top of the bread)

Italian Turkey Sausage Open-Faced Sandwich Ingredients

First, turn the oven to broil so it can begin heating.  Mist enough butter spray to cover the top of your bread slice.  Cover your bread slice with goat cheese crumbles.

Heat your thoroughly precooked Italian turkey sausage in the microwave for about one minute (or until thoroughly heated).

Dice your thoroughly precooked Italian turkey sausage and your sweet red peppers.  Place in a bowl and mix. I like to mix them first so the red pepper juice coats the italian sausage.

Then place the diced turkey sausage and diced roasted peppers on the bread slice over the goat cheese. Sprinkle a small amount of sweet basil leafs over the turkey sausage and sweet peppers.

Place the turkey sausage and sweet pepper covered bread slice on a greased cookie sheet and broil for approximately 3 -4 minutes (or until the cheese is soft and the bread is browned.). Promptly remove.

It will be hot, sweet, and delicious.

I served mine with Kashi 7-Grain Crackers, a Laughing Cow spreadable light swiss cheese wedge and almonds.  I love crackers and cheese topped with almonds (I know I’ve said this before, but I really do!).

This is a fantastic way to quickly serve a delicious, hot, and comforting Italian sausage sandwich!
