Dinner in a Hurry: (The Naan’s back!) Creamy Chicken Broccoli Naan Mini-Pizza
I brought a lot of work home with me tonight and needed a simple dinner to make very quickly! I decided to pull out the other Naan half from my Naan Pizza experiment the other night.
I opted to omit the diced tomatoes and decided to try Laughing Cow’s Sun Dried Tomato and Basil spreadable cheese as the bottom ingredient instead, just to speed things up a bit. I was shocked at how good this mini-pizza turned out! It was creamy and almost decadent (and ready in under 10 minutes).
Creamy Chicken Broccoli Naan Mini-Pizza
- 1/2 Tandoori Whole Grain Naan Flat
- 1 wedge Laughing Cow Sun Dried Tomato and Basil spreadable cheese
- Sprinkling of Italian Seasoning
- Sprinkling of Garlic Powder
- 1/4 cup broccoli
- 1/4 cup of Shredded Soystation Mozarella Soy Cheese (Any mozzarella would work)
- 1 thoroughly heated, pre-cooked chicken breast diced into bite-sized pieces
Preheat oven to 400 degrees. Then place 1/2 of a frozen Naan flat on a lightly greased baking sheet, slightly moisten it with water and bake it on 400 degrees for 3 minutes. Meanwhile, steam fresh broccoli and heat pre-cooked chicken breast. Dice into small pieces and set aside.
Once the Naan is finished baking, promptly remove and spread one wedge of the tomato basil cheese over the entire top of the Naan. Lightly sprinkle garlic powder and italian seasoning so they cling to the cheese. Evenly spread diced broccoli, diced chicken breast and mozzarella cheese over the Naan half. Bake at 400 degrees for 4 minutes or until cheese is melted and lightly browned.
This was hands down my favorite Naan mini-pizza yet! It was creamy and savory. The broccoli added a nice crunch and the tomato basil spread and mozzarella played well together. If you are craving a fresh pizza, but don’t have a lot of time. This is the way to go!
