Dessert in a Hurry: Chewy Cinnamon Raisin Puff Bars
I have made several attempts to develop a terrific recipe for a Kamut Puffs bar. If you are not familiar with Kamut, it is a form of wheat (Click here for more information) with an interesting background. Well, as interesting as a wheat’s background can get I guess. Nonetheless, these puffs have a fantastic, chewy texture to them and they have made a great addition to my other bar recipes. I decided it was time they had an opportunity to shine! Below is my final Chewy Cinnamon Raisin Puff Bars Recipe.
Chewy Cinnamon Raisin Puff Bars
1/2 cup honey
1/4 cup crunchy almond butter
2 tsp vanilla extract
1.5 tsp ground cinnamon
1/2 cup raisins
2 cups kamut puffs cereal
1/3 cup millet puffs cereal
To begin, thoroughly mix the honey, almond butter, vanilla extract, and cinnamon in a medium-sized pan on very low heat.
When the wet mixture is well-blended, add in the kamut puffs, millet puffs, and raisins. Stir until thoroughly coated.
Lightly grease a rectangular dish and evenly spread the puffs mixture.
Initially, the batch will be very “gooey”. Freeze for approximately one hour and the texture becomes perfectly chewy. I store my bars in the refrigerator. I love the nice cold, chewy texture.
As with all of my bar recipes, I cut my bars as I go (depending on my appetite!). These are easy to separate and should not need pre-cutting.
…and they are delicious!
I do have to make one quick reference again to the “It’s All About Bees” honey. It is the local honey I pick up at our nearby Whole Foods and Hy-Vee, but they also have an online store.
This is the best honey I have ever tasted. It has such a clean, pure taste. If you can source local honey, I highly recommend doing so. I will never use anything else!
