Dessert in a Hurry: Drunk Plum Cups

Riesling, cinnamon, honey, plums, marcona almonds and mini fillo shells.   I am still awestruck just thinking about it.

I picked up some plums this last weekend and had an epiphany, a dessert epiphany (the best kind).  So tonight I had to test my idea.  I am more than happy with the results.

Let me share!

Drunk Plum Cups: (One serving)

2 tbsp Riesling

1/4 tbsp honey (this does not include the amount I added for final drizzling)

A small amount of cinnamon (enough for sprinkling)

One plum

2 mini fillo shells (I used Athens)

2 tbsp of Vanilla Greek Yogurt (I used 0% Oikos)

2 Marcona Almonds

First, I mixed 2 tbsp of Relax Riesling (my favorite “everyday riesling”), 1/4 tsp of honey and sprinkled a light dusting of cinnamon and mixed until I had a well-blended liquid.  I poured it into a small pan and added my diced plums.

I browned the plums for about 6-7 minutes on medium heat, just until they began to brown and the liquid developed a thick texture.

I sampled the plums, refrained myself from eating the whole batch, and quickly removed the pan from the heat.

Next, I placed a small amount of Vanilla Greek Yogurt into the Mini Fillo Shells and sprinkled the yogurt with cinnamon.

Finally, I added a few diced plums, a marcona almond and drizzled a bit more honey on top of the mix.

These were so cute I wished I had company coming!  Absolutely adorable. I dubbed them “drunk plums” and proceeded to eat them both.
