Apricot Raisin No-Bake Oatmeal Bars

I have been slowly perfecting and altering my favorite no-bake oatmeal bar recipe (Click here for the original recipe), and I absolutely fell in love with today’s batch.  I decided to make a fall version and used diced dried apricots and raisins.  It was so good even Boyfriend Sensei was raving over it!

So…here’s the recipe!

1/2 cup honey

1/4 cup crunchy almond butter

2 tsp vanilla extract

1.5 tsp ground cinnamon

1/4 cup raisins

1/4 cup diced dried apricots

1/4 cup organic kamut puffs cereal (I’m sure any puffed cereal would work.)

1 1/2 cup rolled oats

2 tbsp dark chocolate chips (I use Ghirardelli 60% Cacao Bittersweet Chips)

Heat honey and almond butter on low until well-blended.  Stir in vanilla and cinnamon until the mixture is dark and smooth.  Add rolled oats, kamut puffs, dark chocolate chips, dried apricots, and raisins.

Pour into a dish and flatten.  Allow ingredients to cool and place in freezer for 30 minutes.  Remove from freezer and store in refrigerator.  These are so easy to separate and cut, I do it as I go! Feeling decadent? These are fantastic with whipped topping!
