Mixed Fruit Granola Bars

I have recently developed an appetite for cooking.  My favorite treat to mix up? Granola…anything.

I found this version of Jenna from Eat Live Run’s “Oh She Glows” bars recipe on Spark (by user: MUSICRUNNER) and doctored it up a bit to make my own version.  I made two batches in one week!  This recipe is absolutely addictive.  My adaptation is below:


      1/2 cup Honey
      1/4 cup Crunchy Almond Butter
      1 cup Sunmaid Mixed Fruit (Chop into smaller bite-sized pieces)
      1 1/2 cup Rolled Oats
    1/4 cup Organic Kamut Puffs Cereal
      2 tsp vanilla extract
      1.5 tsp ground cinnamon
    2 tbsp dark chocolate chips (I use Ghirardelli 60% Cacao Bittersweet Chips)


Heat honey and almond butter until they simmer (Do not let it boil).   Place the remaining ingredients in a large bowl.   After the honey and peanut butter simmer, pour the mixture over the other ingredients.
Allow the ingredients to cool and pour into greased square bake pan, spread evenly into pan.  Chill in the freezer for 20 minutes.  Cut bars and store in refrigerator.
