Spicy Shrimp Roll-ups (in less than 10 minutes)

This recipe only takes about 10 minutes from start to end.

Spicy Shrimp Roll-ups

1/2 lb. extra-small frozen shrimped (fully-cooked, tail off, deveined)

1 1/2 tsp. chili powder

1 tsp. Truvia

1/2 tsp. sea salt

1/4 tsp. cajun seasoning

1 tsp. olive oil

3/4 c. Dole Very Veggie lettuce mix

2 tbsp. Wholly Guacamole

4 tbsp. salsa

2 tortillas: La Tortilla Factory Low-Carb Large Size Tortillas

To prepare: Mix the chili powder, Truvia, sea salt, cajun seasoning, and shrimp in a medium-sized mixing bowl until thoroughly coated.   Pour olive oil into frying pan and add mixture, warm with medium-high heat.  Stir until shrimp is thawed and shrimp mix is fully heated.

Divide the large tortillas into two halves.  Spread 1/2 tsp. of guacamole on each tortilla  and evenly divide the shrimp mixture, lettuce, and salsa amongst each half.   Roll up the tortillas and eat as mini-wraps!

Makes two servings (four half-wraps).
